on infoplist (the hell is named) there is an option you can add called "does not run in background". Dont know if it works. But really your problem is not your application running in multitask or not, but the other ones doing so and eating your needed memory :)

I know its for the brave but I remember reading a tutorial on how to make a pre 3gs device multi task by changing a line in the IPSW file and then uploading that. Maybe the same could be done the other way round for >=3gs devices. I would disable multitasking in a second if I could for everyday use

In Cydia there is an app called "disable multitask in 3GS & 4"

Yes. I installed my "lockscreen calendar" and "switcher" from cydia to get it working as I want again. True shame.
